Ingredients

  • 1 cup raw cashew butter (smooth, no additives)
  • 1/2 cup pure maple syrup
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon baking powder
  • 3/4-1 1/4 cup chickpea flour
  • 1/2 cup GF oat flour
  • 1/4 cup frozen raspberries
  • 1/4 cup coconut sugar (optional)

Instructions

  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine the cashew butter (room temp or melt it briefly in the oven), maple syrup, and vanilla extract until smooth.
  3. Stir in the baking powder, oat flour, chickpea flour, and coconut sugar(if using).
  4. Gently fold in the frozen raspberries, being careful not to over-mix or sprinkle them on top, I prefer this method as they gently fall in whilst cooking but remain bright in colour.
  5. Once folded together make a ball, and put it in the freezer for min 10 minutes or can be used in future. Using two pieces of baking paper (parchment paper) roll it out flat and cut out desired shapes.
  6. Bake for 10–12 minutes, until lightly golden around the edges.
  7. Allow cookies to cool on the tray — they will firm up as they cool.

Tips & Variations

  • For a softer cookie, slightly underbake.
  • For extra flavour, add a pinch of cinnamon or lemon zest.
  • These cookies store well in the fridge for up to 5 days or can be frozen.
  • Dust them lightly with icing sugar if they are for guests!
